I really enjoyed playing with these ingredients! The combination of orange and pineapple plus the heat of the pepper flakes makes me think of the tropics!
Tropical Salmon “Spaghetti”
- 1 jar orange marmalade
- 1/2 can crushed pineapple
- 1 teaspoon red pepper flakes (instead of jalapeno)
- 2 teaspoons brown sugar (or to taste)
- Salt and Pepper to taste
- 1 spaghetti squash
- 2 salmon fillets
- Olive oil
In a small saucepan, combine orange marmalade and pineapples. As it warms, add pepper flakes, sugar, salt and pepper to taste. Bring to boil, reduce to simmer and keep warm.
Meanwhile, in a rub salmon with olive oil and sprinkle with salt and pepper. Bake in oven at 350 until opaque.
Serve salmon on bed of cooked spaghetti squash, and spoon sauce on top.
