Sweet and Spicy Salmon with Apples and Squash

This I knew would be a tasty battle – I love salmon, squash, orange marmalade and jalapeno.  I don’t normally get to play with jalapeno since my wife can’t really enjoy too spicy of food.  So this was a challenge since she is my main tester.  I saw a basic recipe immediately but knew I had to tweak it, make it slightly different.  We always cook squash by roasting it and putting a little butter, brown sugar and maybe a chunk of hamburger or sausage in the center.  This time it had to be different.  The final result was well received.  My wife LOVED the squash.  My MIL thought the salmon was excellent.  I snarfled it all down but I did get a picture before it was all gone. What would I do different? First, I’d use FRESH salmon, not some frozen filet — only thing I could find. Oh, and get a smaller acorn squash — the one I got from the garden was 7-8″ across the center; it was HUGE! Also, for the jalapeno, I chopped it rather large and didn’t get much heat — you might want to consider pureeing it or leaving in the ribs and seeds — depending on your usual heat index confort zone.


Sweet and Spicy Salmon with Apples and Squash


This is a two part meal.

Note: I created the salmon glaze first, then did the squash and when I started its final baking, I assembled the salmon and baked it.  If the salmon finishes first before the squash is fully cooked, you can zap the squash in the microwave to hasten the process.

Spiced Apple Acorn Squash

  • 1 acorn squash
  • 2 medium apples
  • 1 1/2 T butter cut into small segments
  • 3 T maple syrup
  • 1 1/2 T honey
  • cinnamon - to taste
  • nutmeg - to taste

Cut acorn squash in half and bake in a pan/sheet for approximately 45-50 mins until almost done, almost fork tender. This is an estimate since each acorn squash seems to bake at its own speed and time.  Let cool then scoop out the squash. I used a cookie baller to remove most of the squash.  Place squash, chopped apples, butter, syrup, honey  in a small pan. Sprinkle on cinnamon and nutmeg, toss to mix (use spoon if necessary) and bake at 350 degrees C until done; approximately another 20-30 mins.

Sweet and Spicy Salmon

  • 1 2" jalapeno 
  • 2 T brown sugar
  • 2 tsp butter
  • 1 tsp honey
  • 1 T Dijon mustard 
  • 2 T soy sauce
  • 3 T orange marmalade
  • salt and pepper to taste
  • 1 lb salmon (for 3 people)

Over medium heat, melt butter, add brown sugar, honey and jalapeno. Remove from heat and whisk in mustard, soy sauce, marmalade, salt and pepper.  Allow to cool; it will thicken.

Place salmon on a foil covered baking sheet and slather on the glaze. Bake uncovered at 350 degrees C for approximately 20-25 mins until salmon flakes with a fork.  If you have extra glaze, you can put more on the salmon about 5 mins before finish.
