Strawberry Crepes a la Ally with White Bread Brittle

Main Ingredients
white bread greek yogurt honey strawberry whipped cream

I thought of a crepe because we had just had blintzes and i was recently learning french. I thought it would be yummy to make a strawberry, honey and vanilla greek yogurt into a sauce so thats what was inside. I wasnt sure what to do with the white bread so i decided to caramelize it – and it was sooo good! This crepe turned out to be delicious and everyone loved it!

Strawberry Crepes a la Ally with White Bread Brittle



For the filling
  • 3 strawberries
  • 1 cup vanilla greek yogurt
  • 2 T honey
  • lots of whipped cream
For the crepes
  • 1 egg
  • 1/2 cup flour
  • 1/4 cup milk
  • 1/4 cup water
  • 1 T butter, melted
For the white bread brittle
  • 1 cup white bread crumbs
  • 2 T butter
  • 1/3 cup brown sugar
To prepare the filling: Blend the strawberries, honey and yogurt in a food processor until smooth. Refrigerate. Fold in whipped cream.
To prepare the crepes: Mix together all ingredients. Pour just enough batter into a hot non-stick pan to coat the bottom. Heat until just starting to brown, then remove crepe from pan. Repeat for all of the crepes (makes about 15).
To prepare the bread brittle: Heat the butter in a pan with the sugar until boiling. Mixture should thicken up like caramel. Stir in the bread crumbs. Let cool and crumble into pieces. 
To put it all together: Roll up the crepes with the strawberry whipped cream. Drizzle more strawberry sauce and honey. Sprinkle bread brittle on top, and serve with strawberries on the side.
