Shrimp Watermelon CevicheSo excited for this battle… these are four of my favorite ingredients. Mix and match them in any way and you get something yum. It was very hard to decide what to make this time around. Almost anything I can think of is summery and yummy and fun.

We spent Friday night with good friends who served an awesome¬†cilantro-themed meal including fresh guacamole, shrimp ceviche and pernil. I had never even heard of pernil before. We ate like kings! The ceviche inspired me to make it again for the battle. I had to use a little bit of the “secret” ingredient in this recipe. It came out great! It was a little sweeter thanks to the watermelon. My lesson? You can never have too much ceviche!! Oh, and I need to eat with Amy and Angel more often!

Shrimp Watermelon Ceviche

Serves: 4

Ingredients

  • 16 extra-large shrimp
  • 1/2 red onion, sliced thin
  • 1 medium tomato, chopped
  • 1 cup watermelon chunks, chopped
  • 2 limes, juiced
  • 1 lemon, juiced
  • 1 tsp Kosher salt
  • 1/4 cup water
  • 2 tsp ketchup
  • 1 avocado, cubed
  • 1 handful cilantro, chopped

Preparation

Steam shrimp for about 10 seconds until they just start to lose their translucency. Immediately put into ice water to cool.

Toss shrimp with onion, tomato and watermelon. Sprinkle with salt. Add lime and lemon juice. In a separate bowl, mix water with ketchup. Pour over the shrimp. Add avocado and cilantro, then toss again. Refrigerate for an hour, then enjoy!
