I love these ingredients so much that I had to do a follow-up recipe. What’s better for lunch on a perfect summer day than a salad made of fresh ingredients? I was inspired to make a deconstructed salad like this by photos on Pinterest, and I’m so glad that I finally did it! I didn’t even care that the pieces were not perfectly shaped… it would have taken too long and I was hungry. It looks great and tasted great too. I made a small portion and kept it all for myself. Yum!
Summery Shrimp, Tomato and Watermelon Salad
- 1 avocado
- 2 slices watermelon
- 1 yellow tomato
- 1 red tomato
- 4 extra-large shrimp, grilled
- 1 Tbsp champagne vinegar
- 1 tsp lemon juice
- 2 Tbsp extra-virgin olive oil
- 2 sprigs fresh thyme
- salt and pepper to taste
Cut avocado, watermelon, tomatoes and shrimp into shapes such as triangles or squares. Arrange on a plate. Combine vinegar, lemon juice and olive oil in a small bowl. Drizzle over salad. Sprinkle with thyme, salt and pepper.
