Pink Peppertini with Strawberry Leather Swizzle

The citrusy juices in this battle made me thirsty for a cocktail. I decided to use crushed peppercorns and sugar on the rim of my martini glass. I ended up using only the papery pink outer layer of the peppercorns, and it looked really pretty mixed with the sugar. That seemed easy enough, but what to do with the yogurt?

 

Somehow I guessed that yogurt can be dried to make fruit leather, and figured if I could pull that off, I could make a sort-of swizzle stick. If I had a dehydrator, I’d have used it… but a dehydrator happens to be one of the kitchen tools that I just don’t own. I set my oven to “Keep Warm” at 150 degrees, and I left the yogurt in there for about an hour. I had to try this twice, because the first time I was left with crumbly yogurt pieces on a piece of parchment paper. I decided to instead paint a thin layer of the yogurt onto a silicone mat, which worked better. It still was more crumbly than I would have liked… maybe some extra honey or an actual dehydrator may have done the trick.

This drink is really good! It takes a little like a lemony sea breeze. It’s a pretty glowing pink color, and the speckled sugar on the rim looks almost like a crushed candy cane. I was so worried about the flowery peppercorn flavor that I may have minimized the quantity of peppercorns used, but there definitely still was a pepper presence, both visually and in taste. I had one waiting for the husband for when he came home from a business trip, and made non-alcoholic versions for the kids.

P.S. Don’t leave the swizzle in the drink too long. A minute is about all the time you have before it starts to dissolve. I guess it’s meant just for a quick dip!

Recipe

Pink Peppertini with Strawberry Leather Swizzle

Preparation

  • 1/2 cup strawberry yogurt
  • 2 Tbsp honey
  • 1 part pink grapefruit juice
  • 5 parts pink lemonade
  • 1 part vodka (or more if you'd like...)
  • dash grenadine (not too much or your drink will be red, not pink)
  • 1/4 cup granulated sugar
  • 10-20 pink peppercorns
Preheat oven to "Keep Warm" at 150 degrees. Add the honey to the strawberry yogurt. Paint the yogurt into an extremely thin layer on a silicone mat. Let the yogurt dry out in the oven until solid, about an hour. Remove and let cool for about an hour. Peel the dried yogurt off of the silicone and roll into a long tube. 
 
Rub the peppercorns between your fingers to remove the pink outer layer. Mix these pink flakes with the sugar in a flat tray, just large enough to put the rim of a martini glass inside. Wet the rim of the glass and dip into the sugared pink peppercorns. 
 
Combine the grapefruit juice, lemonade, vodka and grenadine in a cocktail shaker. Add ice and shake. Pour into glasses. Garnish with fruit leather swizzle and grapefruit slice if desired.

  1. This looks absolutely delish. Wonder how it would taste w/o the grapefruit? I’m trying to think of something pinkish and sour to replace the grapefruit… it already has the pink lemonade!
