I made these Nutella cookies, intending to use them for mini cheesecake crusts. I took a detour, though, and decided to make little cookie sandwiches instead.
These were cute little treats. I didn’t know how the cannoli and candy cane flavors would mesh, but it worked! The cannoli filling was a little thin though… the only improvement might be to thicken it up a little with less liquid, more sugar or some flour.
Nutella Cookie Sandwiches with Cannoli Filling
- 24 Nutella cookies (recipe at http://www.findingyum.com/nutella-cookies/)
- 1/2 cup ricotta cheese
- 1 tsp grated orange rind
- 1/2 tsp orange juice
- 1/2 tsp vanilla extract
- 1/4 cup mini chocolate chips
- 3 small candy canes, crushed
Make Nutella cookies according to recipe. Cool completely.
Combine ricotta, orange rind, orange juice, vanilla and chocolate chips. Put about 2 tablespoons of filling on a cookie, and top with another cookie. Roll sides of cookies in crushed candy canes. Refrigerate for about an hour.
