Maple Kale Smoothie

Main Ingredients
bananas blueberries cashews greek yogurt kale maple syrup strawberry white beans

The husband enjoys Battle: YUM just as I do. When we posted this new battle, he sent me an email from work letting me know that he had “an idea” about what to do for it. He was very excited, but I was pretty hesitant when he told me it was a SMOOTHIE. “Add to the ingredients something like cucumbers or melon and blend in the kale leaves, the beans and the maple syrup.Then top with crushed cashews….as if they were sprinkles.”


I asked him if he would really eat this. He said that if I’d make it, he’d try it. So here we are.

I decided to use bananas, strawberries and blueberries instead of cucumbers or melon, just because it felt safer. I put it all together, and it tasted like… bananas, strawberries and blueberries. I actually didn’t mind it at all. He said he could smell the beans, but couldn’t taste them… and he actually liked the smoothie. He drank the whole glass, and I drank mine. I guess if you put enough fruit into something, it will taste like fruit. It didn’t really taste like you’d expect this challenge to taste, though.

The kids? Wouldn’t go near the green stuff.


Maple Kale Smoothie


  • 4 strawberries, hulled, plus four for garnish
  • 1/4 cup blueberries
  • 2 bananas (very ripe)
  • 1 cup kale leaves
  • 6 oz plain greek yogurt
  • 1/4 cup canneloni beans
  • 1/4 cup maple syrup
  • 1 cup ice cubes
  • 1/4 cup cashews, crushed


Blend strawberries, blueberries, bananas, kale, yogurt, beans, maple syrup and ice cubes until smooth. Pour into glasses, and sprinkle crushed cashews on top. Garnish with strawberry and kale leaf.
