My daughter and I love nachos. Only thing is, we are both lactose intolerant and a nacho just isn’t a nacho without cheese. But, at Trader Joe’s, this great organic store in NY, I found a shredded soy cheese blend and lactose free sour cream and our nachos were born!

Lactose-Free Nachos

This is a basic nacho dish with beans, beef, jalapeno, sour cream, cheese and black olives. When the nachos were done cooking I put some fresh chopped tomato on top and some salsa and we were set for the superbowl. They were tasty and good and frankly, if you haven’t had real cheese or sour cream in awhile, you don’t realize what you’re missing, but these lactose free brands we bought were better than most, so the experience was delish!

Lactose Free Nachos

Preparation

Ingredients

Tortilla chips
1/2 lb ground beef, cooked
chopped tomato
1 cup or more of shredded cheese (I used a lactose free brand)
2 - 3 big spoonfuls of sour cream (again, lactose free brand)
jarred salsa
canned jalapenos
black olives (chopped)
red beans (you can use black, pinto, pink - your choice)

Preheat oven to 350 degrees. Layer bottom of tin with tortilla chips. Then sprinkle the cooked ground beef over, then layer with cheese and then beans... then add another layer of tortilla chips, beef, cheese and beans (this is where I added the jalapenos, just on MY side of the pan) and then cook until you see the cheese melting. Watch closely so it doesn't burn - it's just for a few minutes.

When it comes out, sprinkle with chopped black olives, fresh tomatoes, salsa and add dollups of sour cream.
