Flank Steak Cauliflower Pizza with Ginger-Mango Sauce

I was so excited about this battle that I decided to do it twice. This worked out well, because I was able to use the same marinated flank steak for two very different recipes.

This first recipe is my second attempt at a cauliflower pizza. It didn’t go over so well the first time texture-wise, and apparently I haven’t improved in my cauliflower-pizza-making skills. The dough looked good but didn’t hold up well at all. The slices couldn’t be picked up, so I make some suggestions to change the recipes for the future (add another egg and some flour). I DEFINITELY should have cut the pieces of steak to be more bite-sized.

Overall, the taste was really good.  At first glance, the daughter was not a fan of the sauce, but she said “it tastes much better than it looks”. Personally, I thought the sauce looked great… a little like chimichurri. I think the orangey-green scared her. She got over it, then commented that she thought the pizza tasted like sushi. The husband actually agreed. At first, I was confused by this (…no fish…?) But then I realized that a family-favorite sushi restaurant serves a really great roll with a sweet mango sauce that tasted very similar. We never eat mango at home, so the taste must have reminded everyone of that maki sauce.

The husband commented that the cotijo cheese didn’t add much… but it wasn’t supposed to. He must have been bothered that I made him make a trip to the supermarket just for that one ingredient, but I didn’t want to use any other cheese. The bright flavor from the mango and ginger made the pizza really work… I just wish the dough held together better. Maybe I’ll be successful on my third cauliflower pizza attempt.

Recipe

Flank Steak Cauliflower Pizza with Ginger-Mango Sauce

Preparation

For the steak/marinade: 
  • 3 T olive oil
  • 3 T honey
  • 3 T ginger, minced (and a few thin slices, too)
  • 2 T soy sauce
  • 2 T dijon mustard
  • 2 T garlic, minced
  • 1 T worcestershire sauce
  • 1 flank steak
Mix all ingredients together in a ziploc bag. Add the flank steak and marinate for 6+ hours. 
 
For pizza crust: 
  • 1 small head cauliflower
  • 8 oz fresh mozzarella cheese
  • 1 T ginger, minced
  • 1 tsp garlic, minced
  • 2 eggs (I used only one and it didn't hold together well)
  • salt to taste
  • flour (optional)
Put cauliflower florets into a food processor and pulse until fine. Add mozzarella cheese to food processor and continue to pulse. This will start to look like pizza dough (from a distance). Add the ginger, garlic, eggs and salt. The texture will be wet. If you're not looking for a purely cauliflower crust, you might want to add some flour. Thinly spread the "dough" onto a pizza pan and optionally dust with flour. Bake at 450 for about 20 minutes or until browned. 
 
For the mango sauce:
  • 1 mango, peeled, pitted, and cut into small cubes
  • 1 lime, juiced
  • 2 T crystallized ginger
  • 2 T sugar
  • handful cilantro

 Put all ingredients into a food processor and blend until smooth. 

To put it together: 
  • Red onions, sliced thin, sauteed
  • 2 T Cotijo cheese

Grill the steak to medium-rare. Let cool slightly. Thinly slice across the grain, and cut each piece into smaller bite-size pieces. Spread mango sauce on the prepared cauliflower pizza. Sprinkle with cotijo cheese and red onions. Arrange steak on pizza. Put pizza in oven and broil for about 5 minutes.
