I really didn’t know what I was going to do with the Four Cs. The only thing that came to my head was Sesame Street’s “C is for cookie and that’s good enough for me.” Perhaps the coffee, cashews and maybe the cilantro could be combined for a cookie but I couldn’t fathom putting in cabbage.
As it turned out, the wife was sick over the weekend. When she is sick, she makes homemade chicken soup. Not surprised, right? You didn’t think anyone who does Battle Yum is going to use a can, did you? The thing is, she never actually eats the chicken. As usual, she turned to me and said “The chicken is yours.” and that is when it hit me. Why not increase the Battle Yum list of Cs with chicken, cheese and croissants!
I didn’t think anyone would really care for a strong coffee taste, so I added the Kahlua (coffee liquor) to sweeten the taste up a bit. While you can still taste the cashews and cilantro, they became much more subtle after the Kahlua was added. So how did it go? I gave some of the chicken to the wife out of the mixing bowl. In all my challenges, this was the worst comment I ever received: “It is inedible”. She added that the Kahlua made the chicken “too sweet”. However, when I included the croissant and covered it with melted muenster cheese and a crunchy cabbage leaf, all was made better. Both the boy and the girl at the meal completely and said it was “definitely good.” The wife ate the “inedible” sandwich without a negative comment about the sweetness of the chicken. I know the flavor was still there, but I guess the cheese hid it well enough for her to give the final product a thumbs up. Good in the end!
Drunken Chicken on a Croissant
- 1/2 cup iced coffee
- 1/4 cup Kahlua
- 1/3 cup ground cashews
- 1/4 cup fresh cilantro chopped
- 4 cabbage leaves, steamed
- 1 roaster chicken, white meat only
- 1/2 cup red onion, diced
- 8 slices Muenster cheese
- 4 croissants
Heat oven to 300 degrees. Boil whole chicken in a pot with carrots and onions. Let meat cool overnight. Pull off white meat and shred with your hands, placing in mixing bowl. After chicken is shredded, pour coffee and Kahlua over it and mix with your hands until liquids are absorbed by the chicken. Add cilantro, ground cashews and chopped onions, and mix thoroughly.
Split the croissants in half and scoop chicken onto one side. Place a slice of muenster cheese over the chicken and on the side of the croissant.without chicken. Place croissants in oven and toast until the cheese melts. Place a steamed cabbage leaf on top of the chicken and cheese side, then cover with other side of croissant to make a sandwich.
