Coffee-Rubbed Pork Sliders with Cashew “Mayo” and Asian Slaw

IMG_3812BAM! You didn’t think this one could be done, did you, LK? These little sliders were so yummy! The husband said that he loved the way that the flavors blended together. I might have used chicken to keep the “C” theme but the pork went really well with the Asian theme going on. The mayo was creamy, and the slaw was crunchy and sweet. I’d definitely make these again… they looked and tasted great!

Coffee-Rubbed Pork Sliders with Cashew “Mayo” and Asian Slaw

Serves: 48


Cashew "Mayo"
  • 1/2 cup roasted cashews
  • 1/4 cup water
  • 2 Tbsp lemon juice
  • 1 tsp hot sauce
Asian Slaw
  • 1 head napa cabbage
  • 1 green onion
  • 1/4 cup cilantro, chopped
  • 2 Tbsp soy sauce
  • 2 Tbsp rice wine vinegar
  • 2 Tbsp brown sugar
  • 1 Tbsp lime juice
  • 1 tsp ginger
  • 1/2 tsp sesame oil
Coffee Rub
  • 2 Tbsp coffee grinds
  • 2 Tbsp brown sugar
  • 1 Tbsp red pepper flakes
  • 1 tsp paprika
  • 1 tsp white pepper
  • 1 tsp ground ginger
  • 1/2 tsp garlic powder
  • 1/2 tsp coriander
  • 2 packages potato slider buns (48 total)
  • olive oil for brushing
  • 1 lb ground pork


For the "mayo": 

Grind the cashews in a coffee grinder (into a fine powder). Transfer the powder into a bowl and add water, lemon juice and hot sauce. Stir until combined. Add extra water if needed to make it into the consistency of mayonnaise. 

For the slaw: 

Chop the cabbage, green onion and cilantro. Combine the soy sauce, vinegar, brown sugar, lime juice, ginger and sesame oil to make a dressing. Toss with the cabbage mixture. 

For the coffee rub: 

Blend the rub ingredients in a coffee grinder (coffee, brown sugar, red pepper flakes, paprika, white pepper, ginger, garlic powder, coriander). 

For the sliders: 

Brush the slider buns with a little olive oil. Lightly toast the buns on a hot griddle. Keep griddle hot. 

Flatten the ground pork into a large rectangle, about 1/2 inch thick. Coat with the coffee rub. Flip the rectangle and coat the other side. Cut the rectangle vertically and horizontally to form one inch square burgers. Cook the burgers on the griddle. Build your sliders on the buns with a burger, some "mayo" and some slaw.
