When I heard the ingredients for this dish I tried to think of something unique to make. Ideas of shrimp and pasta salad with a watermelon sauce or something where I baked the avocado came to mind. But at the end of the day, the fact is, these ingredients shine all on their own. A little balsamic vinegar, salt and pepper and the watermelon explodes with flavor. Add fresh heirloom tomatoes and herbs from my garden, and it pops further. Finish it off with avocado and shrimp and the dish is done.
Results – everyone loved it and couldn’t figure out why the watermelon seemed to taste so good. Sometimes you really shouldn’t mess with perfection.
Chilled Shrimp & Watermelon Salad
- watermelon (I used a quarter of a whole one), cubed to desired size
- 1/2 lb shrimp, cut in half if large
- heirloom tomatoes, sliced - mix of colors, or cherry/grape tomatoes
- 1 avocado, cubed
- 1-2 tbsp. fresh basil
- 1-2 tbsp. fresh thyme
- 1 tbsn good olive oil
- 1 tbsn balsamic vinegar
- salt/pepper to taste
In a glass bowl, mix watermelon cubes and heirloom tomatoes, or cherry tomatoes. Add avocado and shrimp. Then mix together balsamic vinegar and olive oil together and pour over top. Gently fold all ingredients together. Add salt and pepper and all the herbs and gently fold again.
