Blood Orange Chocolate Truffles with Peanut Crunch

Main Ingredients
bloodorange chocolate bar peanuts

In addition to my salad entry, I felt the need to make a dessert out of this challenge. After all, we have to put the blood orange liquor to good use. Yes, I left off the chicken. Yes, I’m very happy that I did.

We ate them after the husband’s Blood Orange Chicken meal. The husband and I are big fans of orange+chocolate, so these buggers were perfect. P.S. Happy anniversary to us!

Blood Orange Chocolate Truffles with Peanut Crunch

Serves: 8

  • 2 Tbsp butter
  • 4 tsp heavy cream
  • 1/4 cup dark chocolate chips
  • 1 Tbsp blood orange liquor
  • 1 tsp blood orange zest, plus more for garnish
  • 1/4 cup peanuts, ground
  • 2 Tbsp brown sugar

Melt butter in a small saucepan. Add heavy cream and stir to combine. Remove from heat and add chocolate chips. Stir until chips are melted and mixture is smooth. Add orange liquor and zest and combine thoroughly. Chill in refrigerator until firm.

Grind peanuts. Mix in brown sugar. Remove chocolate mixture from refrigerator and form small balls. Roll each ball in the peanut crumble, and top with some orange zest.
