I love, love, love peanut butter. The problem is, the family doesn’t, so I wasn’t sure how this was going to go over. I saw this idea how you can make a donut with cake batter and bake instead of fry it and I said, “why can’t I do that?” I had this mini bundt pan and went ahead and gave it a go.
I made yellow cake, squished in a ripe banana and then made a peanut butter and honey glaze with confectioners sugar. When the mini donut cake was done, I flipped it out as soon as I was able to, so that it was still hot and the glaze would melt on top.
(I’m going to start with me) I thought it was great and I could have eaten the entire bowl of glaze myself (I ate half before I forced myself to stop). My daughter said, “wow, for someone who hates peanut butter, this isn’t bad.” My husband took a big bite, chewed twice and “froze.” I’ve been married to him for a long time and I can tell you – this isn’t a good sign. He commenced eating and then swallowed slowly. I asked him what he thought and he said “creamy.” Hmmm… I said “do you think someone out there would like this?” He said, “I’m sure there is someone out there that would love this.”
I added chocolate to the leftover batter and made a marble cake (mashed banana was still in it) and then covered it with chocolate frosting. Daughter loved this even more (as it was sans peanut butter), husband said it was now fine and my son actually ate something from BattleYum and thought it was disgusting. He even tasted the peanut butter glaze and thought that was disgusting, too. Of course, he can’t stand bananas or peanut butter, but he did try. Seriously, if you like bananas and peanut butter, this was not bad at all. The glaze was great.
Banana Cake “Donut” with Peanut Butter/Honey Glaze
- Yellow Cake Mix (I used a marble mix and saved the chocolate pack until later) - other ingredients for the yellow cake mix are eggs, water and oil
- 3/4 cup confectioners sugar
- 1 ripened banana, mashed
- 2 tbs peanut butter
- 1 tbs honey
- 1/2 tbs vanilla extract
- 2 tbs milk
Mix Yellow Cake Mix according to directions. Then mix in well mashed up banana. Put in small bundt pan and cook about 10 minutes till browning on edges and toothpick comes out clean. Turn over as soon as allows, so it's still warm.
Mix confectioners sugar, peanut butter, honey, vanilla extract and milk till very smooth and then place immediately on top of hot/warm cake. It should melt on top a bit as you spread it around. Let cool and enjoy!
